Mini Veggie Lasagnas

I love this idea of little lasagnas in muffin cups.  If you’re looking for portion control, baking teeny lasagnas like this will do it for you.  Or they’re just totally cute and insanely delicious. Mini lasagnas are also super easy to freeze for easy dinners later on.  And with how busy we’ve been around here [...]

Ye’Abesha Gomen (Mild Collard Greens)

This is my new favourite way to prepare any greens. You could also use it to make delicious kale, or even chard.

Vegan Niter Kibbeh (Ethiopian Spiced Oil)

So if you’ve decided you want to master Ethiopian food like you’ve been eating in restaurants, you’d better start making yourself some spiced oil to cook with.  And if you are doing it while you’re celebrating Vegan Mofo, you’d better figure out how to do it without butter. It’s a family stand-by, and I know it works because my Mum often requests “Fajita Night”, which means that we make a batch of this chili plus a batch of seasoned ground beef (for the carnivorous Dad), and we all get to make our own Fajitas with whole wheat tortillas and fillings of choice. My favourite fillings include the veggie chili, cheese, low-fat sour cream, chipotles, and guacamole. Mmmmm.

Eggplant, Lentil & Quinoa Casserole

This is a variation on a casserole I’ve been making for the last couple of years whenever I need a week’s worth of something healthy on hand. It combines a balance of protein, grains, and veggies, so it works really well when I have a crazy busy week and need to grab and go! I [...]

Red Mole Chili Enchiladas

You know what I love?  Enchiladas.  They have become a staple around my house since I made my Kale & White Bean Enchiladas.  I’ve had enchiladas on the weekly rotation ever since, mixing it up a little by adding poblano peppers to the tomatillo & onion mixture when I’ve got them on hand. I thought [...]
