My favourite adult drink on earth? Mojitos. It’s the mint + lime combo that I love so much, and I was craving it tonight. So I got all mixological with my food processor and made a mojito-inspired dessert: Mango Mojito Sorbet.
As long as you have some frozen fruit on hand, you can mix it up in a food processor and have an instant sorbet! No ice cream maker necessary! And sorbet any time you want it, plus you get in a serving or two of fruit for the day. Mmm.
This was the perfect treat to cool down with after dance class tonight. It makes a fairly tart treat (which I quite like), but you may want to add a little bit of sweetener of your choice (I’d go with a liquid sweetener here, like 1-2 tsp. maple syrup)
Mango Mojito Sorbet
Inspired by Cara’s Mojito Frozen Yogurt, and Meghan’s Blackberry Ginger Sorbet, Serves 2
- 1 c. frozen mango cubes
- 1 frozen banana, cut into chunks
- the zest & juice of 1 lime
- 6-8 mint leaves
- 1/4c. – 1/2 c. almond milk
Combine fruit, lime, and mint in a food processor and blitz well. You may need to scrape down the sides a couple of times. Add almond milk, 1/4 cup at a time, until the mixture is smooth.
Transfer to two bowls, grab a couple of spoons, sprinkle with unsweetened coconut or cacao nibs, and cool down in style!
