I love my Mum, and it’s her birthday today, so she needs a special granola!
This one is made with Kamut and Ginger, and yummmmm it’s fantastic and makes you feel all toasty warm and happy inside. I think I’ll be using kamut flakes in granola forever more. And you want to know why my Mum gets granola for her birthday?

Mum deserves granola because she’ll sing Adele songs with me at dinner parties:

Mum deserves granola because she’s an amazing, nurturing partner and a great role model for how to be in a relationship:
Mum deserves granola because she appreciates the shawls I knit for her:
But most of all, Mum deserves granola because she’s the best Mum ever.
And you can have granola too, because my Mum would totally share her last bowlful with you. Happy Granola-ing!
Kamut Ginger Granola
- 1 1/2 c. kamut flakes
- 1/2 c. uncooked quinoa
- 1 c. crystallised ginger, chopped (choose a vegan one)
- 1/3 c. dried unsweetened cherries
- 1/3 c. hazelnuts, chopped
- 1/3 c. coconut oil
- 3 Tbsp. maple syrup
- 1 Tbsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1 tsp. vanilla extract
Preheat oven to 350F.
In a large bowl, combine kamut, quinoa, ginger, cherries, and hazelnuts.
In a small pot, heat coconut oil over low heat until it becomes a liquid. Add maple syrup, cinnamon, nutmeg, and vanilla and stir well. Pour the coconut oil mixture over the kamut mixture and stir well to combine all ingredients.
Spread the mixture out over a baking sheet in an even layer.
Bake at 350F for 30 minutes, stirring twice, until granola is toasty golden brown.
