Sundried Tomato & Scallion Egg Salad

Now that you know How to Make Perfect Hard-Boiled Eggs Every Time, you can make yourself one of my favourite recipes on the planet — Sundried Tomato & Scallion Egg Salad.

I have quite a sentimental attachment to this egg salad — it’s a recipe that Mr. KitchenOperas used to serve at his café, where we first met.  I often say that we fell in love over his cappucinos and egg salad, and this here is that egg salad recipe.

It’s divine on open-faced sandwiches on my Quinoa & Buckwheat Gluten-Free Bread, lovely in regular sandwiches for a picnic, and most excellent as what I call: “Egg Salad Salad” — an undressed green salad topped with a big scoop of egg salad.  (Try it on arugula, mmmmmm).

The secret is in the combination of sundried tomatoes and scallions, which you may refer to as green onions.  Mr. KitchenOperas makes larger batches of the Sundried Tomato & Scallion Mayo in the food processor, which works to make large batches of sandwiches and extra mayo that you can use in other recipes.  I really love this mayo on veggie burgers, too.

The quality of mayonnaise you use here does indeed make a difference.  Our house brand is Hellman’s mayo, and we always choose the full-fat version.  Use a mayonnaise that you love… I can’t wait to try it with homemade mayo from scratch!

Sundried Tomato & Scallion Egg Salad
This is Mr. KitchenOperas’ Famous Egg Salad recipe.  In fact, I totally fell in love with him over this egg salad.  So serve it with caution.  Serves 2.

  • 2 hard-boiled eggs, peeled & chopped
  • 2 Tablespoons, mayonnaise
  • 2 green onions, white & green parts chopped
  • 4 sundried tomatoes, finely chopped
  • sea salt & cracked black pepper, to taste

In a bowl, combine all ingredients with a fork.

Eat with delight!
