It’s the first day of September! And that means it’s Vegan MoFo — The Vegan Month of Food!
This is the 4th time that I’m blogging delicious vegan food all month for Vegan MoFo — and it’s the 2nd time that I’m collaborating with my dear friend Ashley, of Dancing Through Life.
Last year for Vegan MoFo, we were thrilled to blog a month of vegan hummus — and we had such a blast collaborating together. There’s just something wonderful about being in the kitchen and being creative with a good friend!
This year, we are excited to be blogging Vegan Eats for Fuelling Your Body for Vegan MoFo 2014! Ash and I have both been focusing on our exercising lately, and eating to fuel all the activity we’re doing. This means focusing on delicious, clean meals that keep us going through our busy days, and make us strong for our workouts! Our recipes will all be gluten-free and vegan-friendly. As an added bonus, thanks to the theme, at the end of the month we’ll have an awesome meal plan for you to use!
Ashley is currently doing the 63 day Insanity challenge: “the hardest workout ever put on DVD”. I tried ONE Insanity workout a couple of years ago, and it’s seriously hard. She’s sharing her progress over at her blog — you will be amazed at her progress!
I’m currently focusing on running and weight-lifting. I’m training for a 10k run (at our local zoo on September 20th!) and building up my speed and endurance. I’ve recently started adding hill repeats into my running, and am working on making my long runs ever longer.
We are working hard, therefore we need to eat well to best support our efforts. So… we’re going to focus this month on great gluten-free and vegan meals that will make us strong!
We have a plan for sharing our meals for the month:
- Week One: Breakfasts
- Week Two: Lunches
- Week Three: Dinners
- Week Four: Desserts & Snacks (and a bonus meal plan!)

One of the things I love best about Vegan MoFo is the sense of community you get, when so many people are blogging delicious vegan meals all month. One of my favourite ways to read participating blogs is through randomofo.com — where you get taken to a random participating blog!
A month of hummus?! I can’t believe I missed that. 🙂
